De deskundige jury kijkt niet alleen naar creativiteit van de kok, smaak en presentatie, maar even zo belangrijk is het gebruik van Erkende Streekproducten, streekgebondenheid, duurzaamheid en het verhaal achter de producten”, vertelt Annette van Ruitenburg van Stichting Waddengroep. De Waddengroep coördineert deelname aan de verkiezing vanuit het Waddengebied.

Texels lamsvlees, Kollumer zoete erwt en Groninger zwarte waddenmosterd
Vanuit het project ‘Waddengastronomie versterkt Werelderfgoedbeleving’, die Stichting Waddengroep samen met NHL Stenden en Visit Wadden uitvoert, zijn een 3-tal Waddenproducten genomineerd voor de verkiezing. Texels lamsvlees, de Kollumer zoete erwt en Groninger waddenmosterd gemaakt van zwart mosterdzaad.

Echt Texels Lam, is afkomstig van lammeren geboren, geweid en geslacht op Texel. Lamsvlees met een duidelijke herkomst, zowel qua ras als gebied. Echt Texels Lam heeft bij de moeder gezoogd. De lammeren hebben een belangrijke periode van hun leven buiten gelopen. De Vereniging Schapen Eiland Texel zorgt dat dit streek cultureel erfgoed, en daarmee het Echt Texels lamsvlees, behouden blijft voor Texel.
De Kollumer zoete erwt is een Grauwe erwtensoort en was bijna uitgestorven. Gelukkig werd de Kollumer zoete erwt door Jan van der Velde uit Kollum (vandaar de naam!) op het nippertje van de ondergang gered. Piet Hoekstra uit St. Jacobiparochie kreeg 6 erwten van Jan van der Velde en heeft hieruit samen met collega Jaap de Jong uit Oosterbierum vanaf het jaar 2006 weer een letterlijk en figuurlijk bloeiende teelt opgezet. Daarna sloot Bruinsma Bio zich aan, gezien er ‘nieuwe vraag’ was vanuit de biologische hoek. Groothandel Greydanus uit Heerenveen verhandelt deze erwt ook onder zijn label ‘Peul Natuur’.

In de 19e eeuw werd in Nederland volop mosterdzaad geteeld, onder andere langs de Groninger Waddenkust op het Hogeland. Echter is in Nederland nu de mosterdteelt nagenoeg verdwenen. Sporadisch wordt nog geel mosterdzaad geteeld. Zwarte mosterd is de minder bekende variant en was totaal verdwenen uit Nederland. Ale en Hero Havenga van biologisch akkerbouwbedrijf Landgoud in het Groninger Kloosterburen hebben het aangedurfd de teelt en productie van juist zwarte mosterdzaad weer op zich te nemen een paar jaar geleden. Abrahams Mosterdmakerij in Eenrum produceert de mosterd.

Project ‘Waddengastronomie versterkt Werelderfgoedbeleving’
Stichting Waddengroep is een netwerk van zo’n 300 ‘groene’ waddenondernemers. Met subsidie van het Waddenfonds zet de Waddengroep samen met projectpartners NHL Stenden en Visit Wadden dit netwerk in om waddengastronomie als toeristisch waddenproduct op de kaart te zetten. Tot en met 2026 gaan ze 50 waddenfoodroutes, online marktplaatsen, kennisontwikkeling en -uitwisseling via o.a. masterclasses, receptuur, Waddenschijf van Vijf en scholingmodules ontwikkelen en uitvoeren. Daarnaast brengt Visit Wadden dit voor het voetlicht via o.a. de jaarlijks terugkerende Maand van het Waddenmenu, maar ook via de verkiezing ‘Lekkerste Streek van Nederland’ . Provincie Fryslân, Provincie Noord-Holland en Provincie Groningen cofinancieren het programma (www.waddenvoedsel.nl).

Maandmenu maart 2020

Maart roert zijn staart! Hoewel het de afgelopen weken eerder herfst leek, hopen wij dat de lente gauw zijn intrede doet en wij het terras weer voor u klaar kunnen zetten! Maar… weer of geen weer… we hebben een heerlijk menu voor de maand maart voor u samengesteld. Deze maand serveren we naast alle andere lekkere gerechten op de kaart het volgende 4-gangenmenu:

  • Salade van gerookte kip met bleekselderij, sinaasappel, spek en knoflooksaus
  • Abrahams Groninger Mosterdsoep met spekjes en prei (of de dagsoep)
  • Varkens ribroast gevuld met honingklaver kaas, met rode uien compote
  • Red velvet met aardbeiensaus en vanille-ijs

Reserveer hier snel een tafel om dit heerlijke menu te komen proeven voor maar 29,50!

En… nog de hele maand maart geldt: iedere vrijdag onbeperkt spareribs eten voor maar 20,00 p.p. Vooraf reserveren!

Vrijdag 14 februari is het weer zover: dé dag om de liefde te vieren!

Bij Abrahams Mosterdmakerij verwennen we u deze avond graag met een uitgebreid 4-gangen proeverij, geserveerd per 2 personen, bestaande uit diverse kleine gerechten om samen te delen:

  • Aperitief

Cocktail van gin, tonic en rozenwater

  • Voorgerecht

Het samenkomen van genot, met o.a. roosjes van dungesneden kalfsmuis, carpaccio salade, kaas-mosterdloempia en een tartaar van gerookte zalm

  • Tussengerecht

Proeverij van hartige soepjes met toast

  • Hoofdgerecht

Een hartstochtelijk trio van kalfs frenched racks met honing-tijmsaus, getranceerde kogelbiefstuk met jus de veau en rode poon met garnalensaus

  • Nagerecht

Chocolade fondue om bij weg te smelten. Geserveerd met o.a. diverse soorten fruit, marshmellows, soesjes, wafeltjes en karamelreepjes om mee te dippen

En heeft u geen Valentijn om een romantisch avondje mee door te brengen? U bent natuurlijk ook van harte welkom met uw oma, broer, buurvrouw, tante of uw hele vriendengroep om elkaar de liefde te verklaren.

En nog leuker: onder alle reserveringen verloten wij een overnachting voor 2 personen in Grand Hotel de Kromme Raake, beter bekend als het kleinste hotel ter wereld. Zo kunt u na een romantisch Valentijnsdiner heerlijk de liefdesrode bedstee in duiken! Op woensdag 12 februari maken wij de winnaars bekend, zodat u nog 2 dagen de tijd heeft om uw koffers te pakken.
